The auspicious Chinese Pomfret is a welcomed fish and highly sought after for eating during the Chinese Lunar New Year. The old generation Chinese Teochews believe that the pomfret is heaven-sent and should be eaten at Chinese Lunar New Year because it symbolises good health and well being. The pomfret is so highly regarded in Teochew culture that no part of it is wasted and even the bones are used for stock. It is rich in protein, unsaturated fatty acids and multi- microelements.
